Apple and Celeriac Salad with Walnuts


Celeriac and Apple Salad with Walnuts Celeriac and Apple Salad with Walnuts

Serves 4


½ a Celeriac, peeled and cut into matchsticks-on a mandolin, if you have one

3 Apples, using a variety of red and green, cut into match sticks on your mandolin

2 tablespoons of Chopped Parsley

¼ Red Onion, very finely chopped

1/3 Cup of Homemade Mayonnaise or Hellmanns

1/3 Cup of Greek Yoghurt

½ Lemon, juiced

1 tablespoon Dijon Mustard

Salt and Pepper

80g Walnuts, toasted and roughly chopped


Mix the first four ingredients together in a bowl.  

Mix the mayonnaise, yoghurt, lemon juice and Dijon mustard together in another bowl to make a thick sauce. 

Season the sauce with salt and pepper to taste and then pour it over your celeriac and apple mixture and stir to combine.  

Place it into a serving dish and sprinkle over your chopped walnuts.  

This salad makes a delicious accompaniment to grilled meat or fish.
