Vegan Wraps

Pepper, Onion, Tomato & Avocado Tortilla Wraps

Great Lent is here, so it's time to get some tasty meatless meals on the menu. Filled vegan tortilla wraps are quick to make and good for lunch boxes too.


  • 1 Red Pepper
  • 1 Yellow Pepper
  • 1 Finely Chopped White Onion
  • 1 Finely Chopped Red Onion
  • 6-7 small cherry plum tomatoes (or equivalent)
  • 4 Tortilla Wraps
  • 200g Hummus
  • 1 Avocado
  • 1/2 cup long grain rice
  • 1 tsp Paprika
  • Vegetable Oil


  1. Preheat the grill
  2. Cover a baking tray in foil
  3. Chop the outside of the peppers off so that they lay flat on the tray and the skin is on the outside
  4. Chop the tomatoes in half (long ways) and place on the tray (skin side up)

5. Grill both peppers and tomatoes until the skins are black
6. Caramalise the onions in a pan using vegetable oil

7. Remove the blackened skins and slice the peppers
8. Add the peppers, tomatoes and avocado to the onions and mix together
9. Leave on a low heat whilst your rice cooks

9. Boil some water in a pan and add the paprika, then cook the rice (using packet guidelines)
10. Whilst the rice is cooking, lay out your tortilla wraps and spread the humous on top evenly.
11. Once the rice is cooked, drain and spoon onto your wraps adding the vegetable mix at the same time

12. Roll the wraps and serve on hot plates to keep them warm. Enjoy!
