Damsons are a plum tree sub-species that is astringent where their larger cousins are sweet. Some damsons, such as Merryweather, can be eaten straight off the tree, and they all get sweeter as they ripen, but the classic use for damsons is in the kitchen: they make the best jam.

In Eastern Europe, they use it to make the perfect Slivovitz, and anyone who has drunk a good damson wine will understand why it was once nearly a highly rated as port.
