These herbs love sun, and most will thrive in poorer soils, or in containers with a sharply draining potting mix, giving their best flavour with judicious neglect, and the minimum of feeding and watering once established. This rough treatment encourages them to produce more aromatic oils, and can also help keep their growth looking neat and bushy rather than leggy. 

 

Lavender is certainly a Mediterranean Herb; purple flowering English Lavenders are best for cooking with. Sage deserves a special mention as a useful medicinal plant both ingested, and when the bruised or ground up leaves are applied to the skin, it soothes inflammation and nourishes cell repair.
